Tomato Uthappam


This beautiful looking item is Tomato Uthappam – the south-Indian Pizza. It’s quick and easy to make and yummy to eat. Here’s the recipe
INGREDIENTS:
Tomatoes – 2
Onions – 1/2
Coriander Leaves
Dosa/Idli Batter :
  • 4 cups Idli Rava
  • 1 3/4 cup Urad dal
PROCEDURE:
To make the batter:
  1. Soak Rava in medium hot water for 4 hrs.
  2. Soak dal in plain water for 4 hrs.
  3. Make a fine paste of Urad dal & keep aside.
  4. Drain hot water from the rava & wash with cold/plain water.
  5. Take a handful of rava & tightly squeeze the water out of it & add it to the urad dal paste. Continue untill all the rava is done.
  6. Add Salt to it & mix well.
  7. Leave OVERNIGHT in a warm place for fermentation.
To make Utappam :
1. Add salt to the batter prepared already.
2. Cut the onions and coriander leaves finely. Cut the tomatoes into small pieces
3. Heat a Tava, and spread oil on it. Take some batter and spread it evenly (and thickly) on the Tava.
4. Add the sliced onions, tomatoes and coriander on the spread batter and cover it with a lid.
5. Let it cook on low flame for 2-3 mins  (till properly cooked- until its not liquidy)
6. Remove the lid and take the Utappam off the pan for serving.

Apple Halwa


Another diamond from my moms recipe book. The interesting thing is my mom had few apples left and she started making this recipe without knowledge that such dish really exists and she made the perfect recipe which matched the recipes from renowned chefs. Experience in cooking does speak.Tried out the recipe to dot and resulted in a delicious happiness.
Ingredients:
Apples – 4
Sugar – 1 cup (can vary on degree of sweetness)
Ghee – 4 tbspn
Cashew nuts- 4 tbspn
Procedure:
Clean the apples and peel the skin off
Cut them into small pieces.
Take a flat bottom pan and add 1 tbspn ghee and fry the cashewnuts till golden color.
Keep the cashews aside and add the apple pieces to the pan.
Close the lid and cook them for 15 mins on low flame.
Once the apples are cooked well mash it using a masher. If need to cook more keep for another 10 mins.
Add the sugar and mix well till the sugar melts and mixes with the apple mixture.
Close the lid and cook it for 10 mins.
Add the remaining ghee and cook it for 5 mins.
If you want to add some food coloring , mix the food color in 1 tbspn of water and add it after mixing it with sugar. Mix well so the color is adapted well.
Ive added cherry red food color here. If no color is added then it takes yellowish color.
The halwa can be had in a bowl or can be spread on a flat plate and cut into cubes.

banana honey mash babies

take 1/4 banana and add a drop of honey and mash it well vth spoon and feed to vabies

rice milk porridge for babies anna payasam

fry rice for 5-10 mins and grind them coarsely 
boil water for 2 spn rice powder boil 1/4 cupwater
add 2 spn rice powder
once almost cooked add boiled milk and pinch of sugar and cook it well

carrot rasam for babies

boil one half carrot  and one tomato
put them in blender till it forms smooth paste
add 2 tbspn of tamarind juice
put seasoning mustard and cumin seeds some rasam powder  and this juice
add salt and let it boil for 5-10 mins

this us good for babies 6+ as they get carrot too
