baby potato roast curry


Ingredients:
baby potatoes – 1/4 kg
salt
chilli powder
cumin seeds
mustard seeds.
oil – 2 tbspn
procedure:
wash the baby potatoes and boil them till almost boiled. dont boil in pressure cooker the potatoes might become soft.boil it separately on stove.
after cooled peel the potatoes.
in a wok add oil and add cumin and mustard seeds.
after it splutters add the baby potatoes and fry till roasted. keep stirring the potatoes by keeping the stove in medium flame. once it starts roasting add salt and chilli powder and mix well.
fry till roasted.
this can be had as dry curry with any rice or roti.

Pesarattu / Green gram crepes(dosa)


Recipe for the authentic Andhra Pesarattu :) .. Enjoy!
Ingredients:
green gram – 1 cup
salt – 1/2 tspn
Onions – 1 big (for Onion pesarattu)
Procedure:
Soak the green gram in water for 3-4 hours.
Grind the gram to form a smooth batter.
Add salt to taste. The batter dosent need to ferment like most of dosas.
Place the flat pan/tawa on the stove. Once heated take a ladle of batter and spread it nicely to form a circle. drizzle little oil on the edges.
flip the dosa , to cook it on both sides.


Pesara Dosa/Pesarattu/Green gram dosa can be had with chutney/upma
Its Andhra famous dish pesarattu with upma
Another varient is onion pesarattu
finely cut onions. Once the dosa is spread on the pan sprinkle these onions on the dosa.
Be careful while flipping the dosa.

Gobi manchurian


Ingredients:
gobi -1
onions -2
capsicum -1
for manchurian gravy:
spring onions (optional) – 2-3
light soya sauce – 2 tspn
chilli sauce – 1 tspn
vinegar – 1 1/2 tspn
sugar – 1 tspn
salt – 1 tspn as per taste
ginger garlic paste – 1tspn
for gobi fry :
corn starch – 1/4 cup
maida – 1 cup
soy sauce – 1 tspn
salt – 1/2 tspn as per taste
chilli sauce – 1 tspn
water
oil for frying
Procedure :
clean the gobi(cauliflower) and cut into small florets.
take a handi with water and add some salt. boil the water and add the florets. Let it cook in high flame for 5 mins till half cooked.
drain the water and keep the gobi aside.
take a bowl and mix the gobi fry ingredients except oil. add water and make it smooth thin consistency.
add the florets into the bowl and mix well till all the florets are coated with the paste.
take a wok and add oil for frying. once oil is heated deep fry the florets till golden brown. or as an alternative deep fry the florets and keep aside. and fry it for the second time till brown.
manchurian gravy:
take a wok or pan add 2 tbspn of oil. once oil is heated add ginger garlic paste and fry, add onions and fry till transluscent. add the capsicum and fry it for 5 mins till almost cooked.
add soy sauce, chilli sauce, vinegar, sugar, salt and mix well. let it cook in slow flame for 5 mins.
add the fried gobi and mix well to coat the gobi with manchurian gravy. cook it for 5 mins in slow flame till the gobi absorbs the flavour.
gobi manchurian is ready.

Banana flower vada (fritters)



Ingredients
Channa dal -1 cup
Garlic –  3 pods
Ginger – small one (tspn)
Green chillies  – 4
Red chillies – 4
Salt  – 1 tspn
Sompu  -1/2 tspn
Curry leaves – 4
coriander leaves chopped – 1 tbspn
Finely chopped onions 2
Banana flower -1

Procedure:
Soak channa dal in water for one hour.
Banana flower Peeling process:
  1. Apply little oil to hands. Slowly remove the florets from the flower. peel off each leaf enclosed and remove the florets till a small cone shaped structure is remaining.
  2. Rub each floret and  remove the stamen which is a small bulge on a thin string. This is very bitter and cannot be eaten.
  3. Remove a transluscent petal from the floret. Some people add it and some remove.Ive decided to remove it.
  4. Repeat the same for all the florets.
  5. Now the banana flower is edible. chop them into small pieces to add to vada.
In a food processor mix ginger garlic and make a paste .No need to peel garlic.
If you wanted to add cashewnuts you can add along with ginger garlic paste.
Strain the water from channa dal.
Add channa dal, red chillies, salt and grind into a paste. Before grinding keep some channa dal aside add it at the end and mix for less time. This will make the vada crispy with dal pieces.
Add onions , green chillies , curry leaves, coriander leaves ,ginger garlic paste ,sombu and banana flower to the dal mixture.
Make small discs of it and keep aside.
Take a wok and add oil. Once oil is heated deep fry the discs till golden brown.
Can be had with chutney or any pickle

Strawberry Cheese Cake



The delicious strawberry cheese cake recipe unlocked !!! :) The simple and easy way to make cheese cake at home

INGREDIENTS:

For base:
Any biscuits (atleast one packet)
Butter - 1/2 cup

For Strawberry syrup:
Fresh strawberries - 5 to 6
Sugar  - 1 cup

For Cheese cake:
Cream cheese : 500gms
Cream : 1 cup
Vanilla essence
Gelatin - 1 tb spoon
Sugar (powdered) - 1 cup

PROCEDURE:

TO MAKE THE BASE:

Mash the biscuits to form fine powder. Melt the butter and mix with the biscuit powder.
Now take the cheese cake tin ( with detachable bottom). Since we did not have it, we used a normal house-hold sieve (without the bottom part).
Place the tin on a place and grease the plate and the sides of the vessel. Now pour the biscuit powder and butter mixture and gently pat so that the mixture sticks together. Form a layer of the mixture. Place it in the fridge for around 20 minutes.

TO MAKE THE STRAWBERRY SYRUP:

Pour one cup of sugar in a thick base pan. Do not mix it and let it stay until the sugar starts melting on the sides. Once most of the sugar has melted, mix it with a ladle. Beautiful reddish brown color will be seen foe the caramelized sugar.
Cut the strawberries into small pieces and add it to the caramelized sugar and mix it for a minute until the strawberries mix with the sugar solution. Now take it off the stove and keep it aside to cool.
Once it is cooled to room temperature, grind it in a mixer to form a puree.

TO MAKE THE CHEESE CAKE:

Pour the cream in a vessel and beat/whip it until small peaks are formed. Pour the gelatin in a small cup of hot water and let it mix well in water.
Now add the cream cheese, powdered sugar, vanilla essence and mix well. Now add 1/2 of the strawberry syrup and the gelatin mixture and mix well (beat in the same direction) until it forms a smooth batter.
Now get the tin out of the fridge and pour the batter on the biscuit mixture and level it evenly. Now keep it in fridge for around 12 hours to set.

Once it is set, pour the remaining strawberry syrup on it and spread evenly. Decorate it with strawberry slices and your delicious strawberry cheese cake is read to savor :)
