Beetroot parantha (Beetroot stuffed flat bread)



Beetroot paratha is one paratha I rarely heard from my friends around. When we can make with many veggies why not with beetroot. It will give a beautiful color and a nice flavour. I like experimenting with beetroot mainly coz of its rich color. The kids will love it and its very good for health.



Ingredients:
Beet root - 2
wheat flour - 1 cup
water as needed for dough
oil - 2 tbspn as needed for making parantha
salt - 2tspn
Procedure:
Clean the beetroots cut the ends and peel them.
Grate the beets using thin grater.
Take a flat pan and add 1 tbspn of oil. Once heated add the grated beets and salt and mix it well.
Cook with closed lid for about 15 mins or till the beets are almost cooked.
Once the beets are cooked let it cool down.
Take a bowl and add wheat flour and little salt and mix well.
Add the cooked beets and mix well.
Add water as required and make a soft dough.
add 1 tbspn of oil and mix the dough well.
Knead the dough for 10 mins which makes the dough soft.
Allow the dough to sit for 15 mins.Can also start making paranthas immediately if time is an issue.
Make small balls of dough and roll it with rolling pin to make small circles or paranthas.
Take a flat pan and put parantha on it.let it fry for a minute and flip it . after a minute add 1/2 tspn of oil and spread on both sides and cook for another minute.press the corners to cook it well
You can accompany it with any curry/pickle
