Aloo Pasanda curry




Ingredients:

potato - 4
tomato -1
onions- 2
coconut milk - 1/4 cup
ginger garlic paste/chopped - 1 tbspn
cumin seeds - 1 tspn
turmeric powder- 1/2 tspn
green chillies- 2
red chilli powder - 1/4 tspn
oil- 2tbspn
water
salt - 1/2 tspn as per taste





Procedure :

clean the potatoes cut into halves and boil it using 1/4 tspn of turmeric powder.
Once boiled keep the stock for adding to curry later. peel the potatoes once cooled and cut into cubes.

in a wok add oil. add cumin seeds, green chillies and fry them for 1/2 a min. add ginger garlic paste and onions and fry till the onions are translucent.

add chopped tomato and salt and fry till the tomatoes are well cooked.
add the coconut milk and 1/4 cup of veg stock from boiled potatoes ( or plain water).
add turmeric powder, red chilli powder and add the potatoes.

keep on medium flame for about 10 mins. add more water/ veg stock if gravy is thickening.

Can be had as curry for roti or plain pulaos.
