Angel hair pasta with mint parsley pesto



Ingredients:

Angel hair pasta - 100 gms ( a bunch in hand can replace with spaghetti)
mint leaves - 1/4 cup
parsley - 1/4 cup or coriander leaves
garlic - 4 pods
olive oil - 4 tspn
parmesan cheese - 4 tbspn




Procedure:


clean the mint and parsley. add them in food processor along with garlic and make a fine paste. keep the pesto aside.

cook the pasta for around 7-8 mins till almost cooked. keep aside 1/2 cup pasta cooked water and drain the remaining. clean pasta with cold water and keep aside.

in a wok/pan add olive oil and add the pesto prepared. add some cooked water if its too thick. add the cheese and mix them well, let it cook for 5 mins to remove the herbs raw taste.

add the pasta now and mix it well. can add shredded cheese as topping.

When making instantly if you dont have cheese available can also use the cheese slices as alternative though the taste will differ based on cheese type.
