A simple yet rich curry dish to accompany your roti or enhance your rice. If you loved eating kaju curries in restaurant try this and you would now love to make it at home instead.
If you are diet conscious then make sure to reduce ghee and oil.
Ingredients:
Potatoes - 2
cashewnuts - 5 tbspn
onions - 2
tomatoes -2
garlic -10 pods
ginger - 1 small
cinnamon stick - 1
garam masala - 1 tspn
coriander powder - 1tbspn
ghee - 1 tbspn
oil - 2 tbspn

Procedure::
Gravy-
finely chop onions and tomatoes. add oil in a wok/pan and fry ginger and garlic. add onions and fry till transluscent. add onions and little salt and cook with closed lid for 5 mins.

Take a mixie/food processor add 1 tbspn cashews, cinnamon stick and the above onion tomato fried. make a smooth paste of it.
Add the gravy to the wok and cook it for 5 mins with closed lid. Add water if the gravy becomes thick.
Peel off and cut potatoes into medium size pieces. Add the potatoes to the gravy mixture and cook it for 15 mins till potatoes are cooked well. Check for every 5 mins and mix well . add water if deemed necessary.
Add garam masala and coriander powder and mix well.
Take a small pan and add ghee to it. fry the cashews in ghee till golden brown. Add these cashews to the curry.
Use as side dish for roti or rice.
